Dearest Xing came to my place last friday from secluded Cyberjaya and I made mini apple pancakes. We shared a whole big plate while hearing her interesting stories about her climbing the hill to classes, her stupid, stucked up, bitchy and fugly act cute housemate (I saw her Facebook page!!) and the Lim Kok Wing students.
I've bought quite a lot of apples because I thought I was going to start Laura Namangenova's Diet and eat only apples for lunch. But sadly, I couldn't do it, and decided to use the remaining apples to make the pancakes using the recipe I saw in cooks.com.
OK, I might change the recipe a lot, like instead of using apple juice, I used grated apples, but they still turned out to be great. In fact, I think they were the most awesomest pancakes I've ever made. Maybe coz I added baking powder this time, and they rise up nicely. =)
3/4 cup grated apple (2 small apples)
1 egg, beaten
1/2 cup flour
1/4 cup instant oats
3/4 tablespoon baking powder
1/2 tablespoon grated orange peel
honey
salt
Mix all the ingredients in a bowl, lightly grease a non-stick pan, pour 1 tablespoon of the batter for each mini pancake, flip when bubbles begin to form around edges.
I served them with passionfruit pulp and honey, it'd be much better if I have yogurt.

I bought a carton of HL chocolate-flavoured milk the other day and decided to use it to make some chocolate pancakes, with yogurt in the batter.
250g yogurt
125ml chocolate-flavoured milk
2 eggs, seperated
100g plain flour + 2 tsp cocoa powder + 4 tsp instant oats
pinch salt
honey
oil
1 apple + 1 banana
Mix yogurt, milk, egg yolks, flour, cocoa powder, oats, salt, honey and oil.
Beat the egg whites util foamy, fold into the mix.
Heat oil in a non-stick pan, drop batter into the pan, add the apple or banana slices.
Cook 1 minute per side.
Serve with yogurt, honey and chocolate chips.
The banana ones are easier to flip.
Mr Winston said he is jealous of Kenneth and Leonard coz I make them breakfasts. Aww.
And he said my presentation about Fashion Week gave the guys erection. Hmm, guys like anorexic models perhaps?

I love having grapefruit for breakfast. I love the sweet tangy fruit with a hint of bitterness. It is an excellent source in vitamin C and is ranked among the highest in antioxidant activity and so on. But then, it is the interesting red-orangey colour that appeals to me the most. Unlike Vonnie who has grapefruit with yogurt without honey for breakfast, I had it with passion fruit coconut ice-cream and walnut, how sinful is that?
And I love my MNG dress in grapefruit colour, I bought it super cheap, mega sales and I wore it for the photoshoot the other day at Station KL.

Anyway, Rahila has a pair of cute grapefruit colour trousers too! Stalk her at Magic Mirror! ;)

I had a lot of pumpkin left the other day and made pumpkin hotcakes, a quite light dinner.
It's super easy to make, just like my other dishes. :)
Grate the pumpkin and cheese, add in a beaten egg, salt and pepper, then fry in a non-stick pan.
Pour some coconut milk on top, serve with stir-fried eggplant, red pepper and broccoli with balsamic vinegar.
Who knows coconut and pumpkin are such a perfect combination?

Our unclee Leonard makes wonderful ice-creams. And he inspired me to make some too.
his avocado ice-cream crackers cake, absolutely fantastic!! The cream is so smooth and soft, and he added some peanut butter and the combination is amazing! It sounds strange but tasted awesome.
While his ice-creams required whisking, mine don't, coz they're for lazy people to make.
Passion fruit frozen yogurtmix yogurt, pasion fruit pulp and honey in a container, freeze for about 6-8 hours. Easy peasy!
And it's a super healthy dessert as well, I mean, yogurt is obviously a staple for the healthy freaks, and passion fruits are high in vitamin A and C, potassium and dietary fibre.
And I made passion fruit coconut ice-cream last night. Mix coconut milk, passion fruit pulp, honey and lemon zest, freeze in the fridge and it's done. Easy peasy lemon squeezy!I'm supposed to beat it every one hour to break the ice crystals since I don't have an ice-cream maker, but then I was sleeping, oh well.
And I know it's santan (read: fattening and not healthy) alright, but then, vitamin A & C, potassium and dietary fibre!! :D
PS: Kenneth Chaw Jee Wai, I saved the passion fruit coconut ice-cream for ya and you refused to take it just now, your loss, I gave some to unclee!!

Punpkin Gnocchi with Caramelised Cherry Tomatoes and Eggplants

I love making pumpkin gnocchi and they are fantastic. And I think I'm addicted to making them.
1. Fry the sliced eggplants in olive oil, then fry the halved cherry tomatoes.
2. Add into the cooked gnocchi.
3. Add balsamic vinegar, salt, honey and ground black pepper.
4. Garnish with some sage leaves.
Very simple, non?? I always wonder why they said cooking is hard.
PS: I forgot to add cheese. But never mind, make this a low-fat pasta dish. And I have to say, this is the most fantastic gnocchi I ever made. :)

I had a quite fun photoshooting session yesterday at around KL Station, and met up with Hooi Xing after so long we didn't see each other. And of course, met her quite hot (she thinks he's like super hot) French exchange student friend along with his model, such a coincidence for us to choose a same spot for the photoshoot and even the same restaurant for dinner. And I swear we didn't stalk them or anything.
Anyway, I looked so fat in the photos, sigh. I bet it's because of the frequent "midnight romances" I have recently. And I love having fattening stuffs for supper, especially after I bought a jar of peanut butter, I couldn't stop indulge in it.
And I just happen to love peanut butter french toast, and it's super easy to make as well. Make a peanut butter sandwich, dip it into a beaten egg and milk mixture. Fry it it melted butter, top with honey and butter.
I know, I know how sinful it is to eat it during midnight.But whatever, I'll just have something less fattening next time. Such as this toast topped with chocolate peanut butter fudge, pears and walnuts.
I mentioned it's less fattening, not necessarily low-fat. ;)

I just love eggs! That's why I could never be a vegan. And I'm very into omelettes these days.
I made the fluffiest caramelised cherry tomatoes with mushroom omelette the other day, and the secret is to beat the egg white and egg yolk seperately!
Sautee the mushroom with garlic until golden, fry the halved cherry tomatoes in olive oil. Beat the egg white until soft peaks formed, and mix with the egg yolk, salt and pepper. Fry in a non-stick pan, spread the mushroom and tomatoes on top, add in chopped italian prasley.
It was a wonderful light lunch! Or was is second breakfast?
I made a tomato with cheese omelette for breakfast this morning.
It was quite calming actually, beating the egg white. I used to spend hours beating 6 egg whites to make a beautiful lemon meringue pie.
cherry tomatoes and cheese. I used Laughing Cow cheese, plain and cheddar. I just love that stuff!! Very addictive.
I think I mention this lotsa times, but I just love breakfasts!!
